This year, chef has been busy preserving the season’s best. The homemade pickled plums are finally ready, and honestly the aroma is intoxicating. It’s floral, complex, and unlike any plum we’ve ever smelled before.

Chef gave them a serious punch of sourness, just enough to cut through the summer heat and wake up your palate.

They will be serving in our July soup dish. We can’t wait for you to taste the balance of sour, savory, and summer.

Our chef made a special trip to Kyoto to visit , the master artisans behind the bamboo countertops at Rin and Sushi Shikon for the past six years.

He went to express his deepest gratitude, and left truly humbled. Standing among Kyoto’s breathtaking bamboo, he was moved by the incredible skill, patience, and effort that goes into every single harvest.
