Wagyu is everywhere these days.

But most of the “Wagyu” you’ll find in the U.S. is actually Australian, not Japanese. Genuine Japanese Wagyu is still surprisingly hard to find.

It reminds me of the Kobe beef boom years ago. Despite more than 1,200 years of history behind it, the brand wasn’t well protected overseas. Before long, even Arby’s was selling a “Kobe Beef” sandwich.

善意から生まれた取り組みだと思います。

でも、本当に大切なものまで効率化してしまってはいないだろうか、とも感じます。
