Momi, “pearl” in Hawaiian, name of owner’s dog

Nonmi, inspired by the word nonbei (飲兵衛). The first part of the word non (飲ん) is derived from nomu (飲む), which means “to drink” in Japanese. Bei or Beh (兵衛) actually means soldier and it’s also a suffix to make verbs or nouns “personify”. Nonmi is the Momi version of nonbei.

Sake forward popup - An evening with the Sake brewer from Japan — May 14 (Thursday)

Join Chef Chris and Manny Gonzales for a one-night-only sake-focused omakase experience featuring selections from Nakao Brewery ( Seikyo / Maboroshi) and Joto sake, visiting from Japan.

Seating Times:

6:00 PM & 8:00 PM

The evening will feature five premium sakes personally presented and poured by Yusuke Nakao, 7th-generation leader of Nakao Brewery and Manny Gonzales. Following the passing of his father, Tsuyoshi Nakao, he assumed the role of General Manager in 2025, continuing his family’s legacy with a foundation shaped by Tokyo University of Agriculture and experience across breweries, retail, and the National Research Institute of Brewing.

Manny Gonzales, International Wine & Sake Specialist from Southern Glazer’s Beverage Company, will guide the sake experience alongside Chef Chris.

This special event reverses the traditional format—sake leads, and each course is designed to follow and complement its expression.

A rare opportunity to explore the philosophy, craftsmanship, and evolution of Seikyo, Maboroshi through the perspective of the brewer himself.
