AMARU IS MORE THAN A NAME. IT’S OUR STORY.

In 2019, Chef Rodolfo Cuadros opened Amaru in Chicago’s Wicker Park neighborhood with a vision rooted in culture, heritage, and the belief that food has the power to bring people together.

Inspired by Túpac Amaru, a name associated with resistance, dignity, and the fight for equality, Amaru represents something deeply personal to Rodolfo as a Colombian American.

For seven years, we’ve poured our hearts into building more than a restaurant. We’ve built a place where our culture, our community, and our stories have a home.

Recently, we learned that another restaurant named Amara is preparing to open in Chicago. The similarity has already led to confusion, with people asking whether we’re opening another location.

For an independent restaurant, a name isn’t just branding. It represents years of sacrifice, countless hours of work, and the trust of a community that has supported us from the beginning.

This isn’t about competition. It’s about identity, respect, and the hope that there’s room for a conversation.

As Rodolfo shared with Ravenous:

“I don’t want bad blood, you know, like with anybody.”

We respect the passion and hard work that goes into opening any restaurant. We’re simply asking for that same consideration for the identity we’ve spent seven years building.
