People are obsessed with single origin coffee and this is why: it is more traceable and conserves the unique flavor notes of that specific region. For example, all Café Mam coffee comes from Chiapas (the processing centers for each co-op we work with seen represented on this map by stars) and high altitude & rich, nutritious soil under the shade of the canopy give it its regional characteristics. Chiapaneco coffee has a distinctly smooth body with notes of cocoa and nuts, and our different roast levels bring out the additional sweet, chocolatey, floral, and fruity flavor profiles of this exceptional coffee.
