Wednesday is when you realize the week's moving a little faster than you thought.

Lunch rolls around, the smoker's still doing its thing, and suddenly a tray of BBQ sounds a lot better than whatever plan you had before.

Tuesday doesn't get much attention.

No countdown to the weekend. No special occasion. Just a regular day that gets a whole lot better when lunch is involved.

The smoker's been doing its job since this morning. The specials are on the board. The brisket's ready for the knife.

Back by popular demand.

Thursday means chili dogs again.

Not the kind that come out of a roller machine or get thrown together as an afterthought. This one's built the same way everything else around here is. Hot, messy, and worth grabbing a few extra napkins for.

By Wednesday, the week's already in motion.

The pit's done its work. Brisket's resting before the next round hits the board. The lunch crowd starts showing up in waves, some headed for their usual, others checking the specials before making up their mind.

A good BBQ place doesn't feel much different on a Wednesday than it does on a Friday.

That's part of the appeal.

Saturday usually starts with somebody holding the door open for the person behind them.

Line forming a little earlier than expected. Smoke rolling steady. The counter moving fast enough that nobody stands still very long once lunch kicks in.

By the middle of the day, every table starts looking the same. BBQ trays, cold drinks, and people leaning back like they’ve got nowhere else to be for awhile.

Friday usually means somebody’s asking what the special is before they even finish walking through the door.

Smoke rolling, brisket hitting the board fresh, and trays coming across the counter while the lunch crowd starts settling in for the weekend.

Some people stick to the same order every time. Some come in just to see what’s running that day.

Either way, lunch tends to work itself out around here.
