Many years ago when I was still working full time as a photographer, and exploring how to make a career change, I met Evan Hennessey. He hired me to document the opening, behind the scenes documentary style, of his then yet-to-open restaurant Stages at One Washington. I was following my heart into the kitchen, with no sense of where I would end up today; I just knew that I needed to make a change. Evan was following his heart too, but unlike me he knew EXACTLY where he was going. His Northeast James Beard Award (YES!!!) is not a culmination; it is a milestone along his culinary career, a road which will surely be studded with more recognitions and accomplishments. Shadowing him in the kitchen, observing his sensory awareness and creativity and respect for his ingredients was tremendously inspiring. Congratulations Evan Hennessey we always knew you would stand on the JBF podium.

Our chocolate themed dinner at was magnificent! and the entire Black Trumpet team - especially pastry chef extraordinaire Betsy - presented a 5-course meal with creativity and delightful hospitality. Evan created a shrimp dish that can only be described as heroic. Betsy’s dessert plate… well the picture speaks for itself 👆

My part of the planning involved making the various chocolate that chefs utilized… plus sharing my own tasting observations and my flavor-word associations. Chefs ran with that, and I’m still flabbergasted that they indulged my haiku like ideas… ‘milk punch, endive, melon, plus my suggestion of a dressmaking term to describe how a sheet of chocolate melted and clung to the food it was draped over.
