We have a new honey process single origin - Don Noe, El Salvador.

Don Noe and his wife meticulously cultivates this exceptional Pacamara on their 3-hectare farm at 1,800 MASL in La Palma. Due to the farm’s isolation and lack of a wet mill, they focus solely on honey and natural processing, drying the coffee on raised beds. This quality-driven coffee is the result of a partnership with Rodrigo Giammattei of Forest Flame, established in 2019.

Along with this new coffee is a new rhythm we’re doing with our coffee releases. Our team has curated a playlist of songs that speak to Don Noe in some way: the origin, the tasting notes, a mood, a memory, even the label color! We hope it adds something to your first sip!

Last week, a few folks from our team traveled to El Salvador to visit with a few of our favorite producers. We are back at the roastery today, still processing our experience, documenting the knowledge we gained, and doing this all with an even deeper respect for all the hands that make it possible for a cup of coffee to land in your hands.

We’ll be sharing more soon, but wanted to share a tiny glimpse into our time.

Fun fact - Our entire team needs to cross at least 1 big bridge to access the roastery. So for everyone’s safety in these icy conditions, we are delaying our production day, and hope to be roasting Tuesday.

We’ll keep you posted if that changes.

Our first single origin of the year is here- Bryan Bautista, Honduras.

Bryan Adolfo Bautista, a third-generation coffee farmer, transformed his inherited family farm in Musula, Honduras, into a specialty coffee operation. New single origin!

Our team is excited to end this year with Kiamugumo Peaberry, a washed coffee from Kenya.

Grown in the Ngariama community on the slopes of Mount Kenya, this washed lot from Kiamugumo is vibrant and clean. Fed by glacier water and dried on raised beds, it offers juicy citrus, red fruit, and tea-like clarity. Produced by smallholders with deep respect for land and tradition, each cup tells a story of resilience and care.
