Fire up that grill! 🔥 These Lamb Kebabs by are sure to be a hit at your next backyard barbecue. Juicy chunks of marinated 100% grass-fed Atkins Ranch lamb served alongside grilled potatoes and an herby chimichurri sauce. Your guests are gonna want seconds! See FULL recipe below! ⬇️

INGREDIENTS
LAMB
2-3 lb. Atkins Ranch Leg of Lamb
1 onion
5 cloves of garlic
1⁄2 cup parsley
2 tablespoons of dill
1⁄4 cup olive oil
Juice of 1 lemon
1 onion, cut into squares
2 bell peppers, cut into squares
Kebab skewers

CHIMICHURRI
1⁄2 cup olive oil
1⁄4 cup mint
4 garlic cloves
1 t red pepper flakes
1⁄2 salt
1⁄2 pepper
1⁄4 cup olive oil (more if needed)

OTHER
Tomatoes
Baby potatoes
Pita bread (optional)

METHOD
1. Cut the lamb leg into cubes.
2. In a food processor or blender, combine the onion, garlic, parsley, dill, olive oil, and
lemon juice to make the marinade.
3. Marinate the cubed lamb in the marinade for at least 4 hours, but overnight is better!
4. On your kebab skewer, alternate the marinated lamb, bell peppers, and onion.
5. Boil your baby potatoes for 10-15 minutes, or until they can be easily pierced with a fork.
6. On two separate skewers, add your tomatoes on one and boiled potatoes on the other.
7. To make the chimichurri, add all ingredients to a blender or food processor and blend
until smooth. Add more olive oil if needed!
8. Grill your lamb kebabs and potatoes for 10 minutes, or until your desired doneness.
Don’t forget to alternate sides! When you have about 2-3 minutes left, add the tomatoes
to the grill.
9. Serve lamb kebabs on a pita with the grilled tomatoes and chimichurri.

Farming attitudes have changed through the generations, and Glen Eden is proof of just how far that shift has come. As little as two generations ago, farmers across the country applied a scorched earth philosophy to farming. Bulldozers took to tracts of beautiful, established native forest to clear land for more production.

Today, Mark Guscott is taking Glen Eden in a different direction entirely. He's implementing a regenerative farming plan, ensuring the property is well balanced through mixed use farming, and allowing Mother Nature to recover by rotating stock, retiring land, and rebuilding native bush.

Lamb Patty Ingredients: (8 smashburgers)
1 lb. Atkins Ranch Ground Lamb 
1 tsp salt
1/2 tsp black pepper
1 tsp garlic granules
1/2 tsp smoked paprika

Harissa Whipped Feta Ingredients:
6 oz block feta
3 oz full-fat cream cheese
1/4 cup harissa paste (we used mild!)
1 tbsp lemon juice, freshly squeezed
2 garlic cloves
2 tbsp olive oil 
1/2 tsp honey
2 tbsp fresh Greek oregano leaves (loose pack)

Burger Ingredients:
Burger buns
Harissa whipped feta (see above)
Iceberg lettuce, shredded
Atkins Ranch Smashburger (see above)
Heirloom tomato, sliced
Red onion, sliced
Cucumber, thinly sliced with mandoline

Directions:
1. To prepare the Harissa Whipped Feta, add feta cheese, cream cheese, harissa paste, lemon juice, garlic cloves, olive oil, honey and oregano leaves to a high-speed food processor and blend on high for a few minutes until “whipped” consistency, scraping sides halfway through
2. Preheat griddle on high heat with a thin film of oil
3. Add Atkins Ranch Ground Lamb to a bowl, mix in seasonings and loosely form 8 small balls ~2 oz each
4. Place lamb balls on the griddle and immediately press down with a burger press and cook a few minutes until the edges are browned, scrape and flip the burger to continue cooking
5. Once burgers are cooked, add the Harissa Whipped Feta on top of each smashburger while on the griddle and still hot for a melty layer
6. Prepare each burger by adding more Harissa Whipped Feta to bottom slice of bun followed by lettuce, lamb smashburgers, tomato, red onion and sliced cucumber
7. ENJOY!

These Cheesy Lamb Tacos by are sure to be a hit at your next cookout. 🌮 Melty Oaxaca cheese meets seasoned ground lamb topped with a creamy chipotle honey ranch. (You’re gonna want seconds!) See the FULL recipe below. ⬇️

INGREDIENTS:
Lamb Mix:
2 lbs Atkins Ranch Ground Lamb 
2 packs of taco seasoning (Siete is used here)
1/4 cup water (Put this in when you are done cooking so it gets a slight sauciness)

Elote: 
12 ears of corn (ideally grilled, but you could also use equivalent amount of canned or frozen)
1/2 red onion finely chopped 
1/2 cup finely chopped cilantro 
2 finely diced jalapenos
8 oz cotija cheese 
5 diced garlic cloves 
1/2 cup mayo 
Chili powder, salt, and pepper to taste 

Chipotle Honey Ranch: 
1/2 cup mayo 
1/2 cup 0% Greek yogurt 
Juice of 1.5 limes 
2 tbsp fresh chopped dill
1/4 cup honey 
2 chipotle peppers, finely chopped w/ 1 tbsp of added adobo sauce
1 tsp garlic powder 
1 tsp onion powder 
1/4 tsp mustard powder 
Salt and pepper to taste 

2 packs of corn tortillas 
16 oz Oaxaca cheese, shredded

METHOD:
1. Cook the ground lamb in a pan. Once cooked, stir in the taco seasoning and water.
2. Grill the corn and cut the kernels off the cob.
3. Mix corn kernels with remaining elote ingredients. 
4. To make Chipotle Honey Ranch, whisk together all the ingredients until smooth.
5. Add tortillas to grill and top with Oaxaca cheese. Top with another tortilla and grill until cheese is melted.
6. Assemble and serve!

Ingredients:
2 lbs Atkins Ranch Lamb Shoulder
1⁄4 cup olive oil
1⁄4 cup beef broth
Zest of one lemon
Juice of one lemon
1⁄4 cup parsley, chopped
1⁄8 cup dill, chopped
5 garlic cloves, minced
1 tbsp cumin
1 tbsp coriander
1 tbsp paprika
1 tbsp onion powder
1⁄4 cup beef broth

Other Ingredients:
Pita bread
Arugula
Tzatiki
Pickled red onions
Lemon

Method:
1. Cut the lamb shoulder into 1-inch slices
2. Combine the olive oil, first 1⁄4 cup of beef broth, zest and juice of one lemon, parsley, dill,
minced garlic, cumin, coriander, paprika, and onion powder. Add the sliced lamb to
marinate for at least 1 hour, or up to overnight.
3. Preheat oven to 400 F.
4. Add your lamb to a vertical pan, or a baking sheet.
5. Bake for 50 minutes.
6. Rest for 10 minutes. Slice.
7. On top of the pita bread, add the arugula, cooked lamb, tzatziki, pickled red onions, and
lemon juice.
8. Enjoy!
