To continue our outstanding news… Please join us in giving a warm welcome to Shane McCarthy, who joins us as Slate’s General Manager & Sommelier! šŸ·

Shane brings an incredible depth of experience in hospitality, beverage leadership, and guest experience from across Maine’s dining scene. Many of you may recognize him from his time at Fresh & Company in Camden, as well as leadership roles at Bistro La Cave, Marshall Wharf Brewing Co., and The Claremont Hotel in Southwest Harbor. And the best news… he worked alongside Kathleen at Primo! So they already have a strong alignment around creating an exceptional guest experience.

A passionate wine educator and former proprietor of State Street Wine Cellar, Shane has hosted hundreds of tastings and pairing dinners throughout his career. His knowledge, warmth, and genuine love for hospitality make him a perfect fit for Slate. With his extensive wine knowledge, he’s already working on creating wine dinners, tastings and music events for our guests. Stay tuned for a line-up of excellent events!

We couldn’t be more thrilled to have Shane leading our amazing front-of-house team and curating an exceptional beverage program to complement Kathleen’s beautiful food.

I couldn’t be more thrilled about the season ahead - Welcome Shane!! šŸ„‚

We are entering our next culinary chapter and I couldn’t be more excited to share that Executive Chef Kathleen Blake is leading the way!

With more than 20 years of culinary leadership experience, Kathleen is nationally recognized for her commitment to sustainable, farm-driven cuisine. As the chef-owner of Orlando’s acclaimed Rusty Spoon, she earned four James Beard Award nominations while building a celebrated, ingredient-focused restaurant rooted in local farms and producers.

What makes this even more meaningful is her connection to Maine. Kathleen worked closely with nationally recognized Chef Melissa Kelly, first as Chef de Cuisine for the opening of PRIMO in Orlando and developing the organic garden on property; as well as at PRIMO in Rockland, where she was the Events Chef and helped guide the restaurant through a critical operational transition during the pandemic.

At Slate, she’ll bring that same philosophy to life through a scratch kitchen focused on Maine’s seasonal harvest, whole-animal butchery, house-made pastas and breads, and close partnerships with local farmers and fishermen.

We’re honored to have her leading this next chapter at Blair Hill Inn and Slate Restaurant and can’t wait to share her cuisine with you. And I am hugely grateful to Vanessa at Your Maine Concierge for connecting us with Kathleen so we can create a memorable culinary experience for our guests!

We open May 8 and reservations are open—come experience this next chapter with us. www.slaterestaurant.com

If you ignore the snow, it kinda felt like fall today, so of course I made my favorite fall cocktail by Naim. Here’s the recipe: 2oz Empress 1908 elderflower rose Gin, 1.5 oz lemon juice (fresh preferred, but I’m lazy at home šŸ˜†), .75 simple, .5 CrĆØme de Cassis, 4-5 drops egg white (or fee foam), shake with ice, pour in coupe and float 2 drops lavender bitters.
