This is not American lasagna. This is pastelón, from Puerto Rico. Layers of sweet plantains, ground beef and cheese. Este arroz con habichuelas rojas significa mucho para mí, porque me recuerda a mi mamá. Y a ella también, cada vez que se lo come, le recuerda a su mamá, la cual fue mi abuela. Y cuando yo era pequeño, me encantaba cuando lo cocinaba, de cualquier manera que lo hiciera, con pollo frito, con ensalada de tomate y lechuga, con amarillos fritos, con ensalada de papa, con ensalada de coditos, o con tostones, era el que nos gustaba a mí y a todos mis hermanos. Esa es la comida que nos une, la comida de mi familia, de Puerto Rico. Gracias por apoyar la comida puertorriqueña de verdad.
