At Cochon, Chef Link has reconnected with his culinary roots, serving the traditional Cajun Southern dishes he grew up with. Chef Link and Chef/Co-owner Stephen Stryjewski are working with locally sourced pork, fresh produce and seafood, focusing on traditional methods, creating authentic flavors of Cajun country. The restaurant is set in a rustic, yet contemporary interior of a renovated New Orleans warehouse.

Stephen Stryjewski & the party pig: The whole cochon de lait, roasted in the Cajun microwave (IYKYK) & wheeled straight into the dining room, head to hoof crispy, cracklins popping, was arguably a highlight at yesterday’s Tales of the Cocktail celebration with our little bird pals.

Skill sharing at Link Restaurant Group : Cochon Restaurant ‘s head butcher Max went over to sister Gianna Restaurant to show the culinary team how to break down a whole half of a hog. We got a shank, the tenderloin, a ham, shoulder, chops, country ribs, skin for cracklins & plenty of fat to render & meat to grind.

Where is starts & how it lands on the plate: This 1lb bone-in pork chop au jus with melon, pickled peppers & herbs is our current large pork format set. Great item for the table. So summery. And so “us”. Whole animal butchery is a core part of what we do, and Mondays are for breaking down pigs.
