Tiki Salad, Brick-Oven Baked

Cambozola Pear Flat Bread, and Whole Ginger Fried Catfish are long-time favorites. The design of the Parkway Grill is a study in casual sophistication, striking a perfect balance between elegance and rustic approachability. The brick walls are adorned with elegant paintings by Millard Sheets and mixologists prepare hand-crafted cocktails at the expansive bar, an original from 1920's Chicago. Parkway's award-winning wine cellar, comprised of upwards of three thousand bottles, includes a broad selection of wines served by the glass.

Today’s harvest from the Parkway Grill gourmet garden highlights vibrant butternut squash and delicate squash blossoms picked at peak freshness. The naturally sweet butternut squash is slowly roasted to deepen its rich flavor before being blended into a velvety soup. The garden’s squash blossoms are lightly stuffed, delicately fried, and paired with heirloom tomatoes, prosciutto, mozzarella, burrata, pistachios, and a balsamic reduction for a fresh interpretation of classic.

This weekend, Parkway Grill is showcasing something genuinely rare: the Pinkglow pineapple, a vibrant blush-hued fruit grown in Costa Rica.

Unlike traditional golden pineapples, this variety develops its rosy color naturally through selective cultivation. The result is a fruit that’s slightly less acidic, exceptionally aromatic, and delicately sweet—with a smooth, almost candy-like finish and very low fiber. It’s grown in limited quantities, hand-harvested, and carefully packed to preserve both its flavor and striking appearance.
The inspiration came from Bob Smith, during some recent time spent in Costa Rica, he encountered this extraordinary fruit at its source. The Smith Brothers wanted to bring this special pineapple to Parkway Grill to share with our guests — so you, too, can experience this unique fruit.

Chef Martin has thoughtfully paired this tropical delicacy in a salad with arugula, shaved fennel, radicchio, pistachios, feta, and a honey Dijon orange blossom dressing.

Our Braised Lamb Shank returns today and tomorrow: slow cooked until fork-tender, served with rosemary garlic roast potatoes, mint butter, and olives.

This dish carries a bit of history for us. The recipe was first developed during a special guest chef appearance by Jeremiah Tower at Parkway Grill years ago. We’ve honored that foundation ever since—slow-braised, deeply savory, and built for a lingering evening at the table.
