We’re excited to announce the 4th dinner series in collaboration with Preservation Meat Collective at Ramie

This ongoing series celebrates exceptional beef through the lens of Vietnamese flavors, exploring both traditional and modern influences with each dinner. For this next gathering, Chef Thai Nguyen and the Ramie team will present a thoughtfully composed menu that highlights bold, savory, and creamy elements designed to elevate every carefully selected cut.

The evening will feature premium, locally sourced with local farmers from the Pacific Northwest region paired with Southeast Asian–inspired sides and sauces that complement and enhance the natural richness of the beef.

Each dinner in the series offers a new perspective on local beef program and Vietnamese cuisine—bringing together heritage, technique, and exceptional ingredients for a one-night experience that continues to evolve with every installment.

We had the honor of hosting an unforgettable Star Chefs Industry Night- a celebration of Seattle’s rising culinary talent recognized by the StarChefs. It was an incredible evening bringing together some of the most exciting chefs in our city, and we’re grateful to everyone who came out to celebrate with us.

A huge thank you to our partners and sponsors who helped make the night possible. Your support allowed us to showcase a late-night menu that highlighted thoughtfully sourced ingredients and bold flavors—from and pork to , alongside a vibrant vegetarian dish featuring Corto olive oil, and a dessert built around and vanilla.

Behind the bar, our team crafted a lineup of signature cocktails featuring , , , and , plus a non-alcoholic option to keep everyone included—alongside beer and sparkling waters from and Acqua Panna.

Most of all, this night was about community—celebrating the chefs who are shaping Seattle’s dining scene right now. We’re proud to have hosted such an inspiring group and can’t wait to see what’s next for all of you.

On March 4th at 7:30pm, we’re bringing together Chef Danny Conkling x Chef Thai Nguyen, with dessert by Chef Trinh, for an unforgettable evening rooted in classical French technique and inspired by Vietnamese flavors and the bounty of the Pacific Northwest.
