Nearly four years ago, we had our first Robin Project Pop up and this dish was on the menu. But - it actually goes back even further.
I got the idea playing around on a slow night at Winslow’s. I made a couple and they came out great! Unfortunately, I also realized the format and style of the Winslow’s menu meant that it wasn’t a dish that we could serve. I was beginning to get creative and excited about food again, but it also felt like soon it would be time to move on. All from this little fried pasta!
When we moved into our space in Maplewood I wanted to put it on the menu that first summer, but it didn’t feel right yet. The raviolo is Acero’s signature dish and here we were doing another version right next door?! But now I feel like we’ve settled into our identity and earned our place in the neighborhood.
This is really a tribute, like most of our dishes. It’s a Toasted Raviolo, a tribute to the most recognizable dish from our friends on the hill, with a nod to our next door neighbors, Acero Italiano . I genuinely hope if you like our version, then you immediately make a reservation to have the OG version next door.
