Saturday 7:00AM - 1:30PM Darkstar Coffee is a 'specialty coffee' roaster.

This means is that our coffee is sourced from specialty growers from around the world, proven to produce an exceptional product with very few defects. Specialty coffee describes not just the coffee bean, but the entire process from soil to cup. From soil to cup:

Specialty beans are grown by experienced farmers taking advantage of microclimates and other environmental factors specific to their reg

ion. They work to produce a high quality cherry coffee bean, which is then picked at the optimum time. After any initial processing or washing, the green beans then pass through a regulated chain of custody to the coffee roaster. Obviously, the fewer agents in this chain of custody the better. Makin’ the grade:

To qualify as specialty coffee in the 'green' stage, the beans have to score more than 80/100 across all categories. The beans must be properly sized and dried and free of primary defects, with no quakers (unripe beans). Once we get the beans, we use profile roasting techniques to unlock their full potential. This ensures the coffee presents in the cup free of faults and taints and has distinctive attributes. A global standard:

Co fermentation session with Marcus at the La Marzocco Open House ☕
Marcus dived into how co fermented coffee is made, what actually happens during fermentation and how different fruits can completely shape the final cup.
Marcus walked everyone through the process of our newest blend - Strawberry Shortcake, followed by tasting sessions that gave people a chance to experience just how much processing impacts flavour.
From fermentation tanks to the final brew - it was a great chance to slow it down, ask questions and give it a taste!

A recap of our La Marzocco open house event at Darkstar.
We had coffee professionals in the space sharing knowledge, pouring shots, talking technique and breaking down what goes into making great coffee on La Marzocco home machines.
From machine demos to hands on tastings, latte art sessions and co fermentation conversations, it was a full morning of learning directly from people who live and breathe coffee every day.
A big thank you to La Marzocco for sharing their expertise and giving everyone the chance to learn more about getting the best out of a home setup.
And thank you to everyone who came down, asked questions and got involved. ☕️

How does co-fermented coffee actually work? 🍓☕

For this coffee, only the ripest cherries were picked before beginning a 72-hour anaerobic fermentation process.

During fermentation, fresh strawberries were added directly into the tanks with the coffee cherries, allowing the fruit and coffee to ferment together and develop deeper sweetness, body and complexity naturally through processing.

After fermentation, the cherries were pulped and dried slowly on raised beds until reaching the perfect moisture level - carefully monitored the entire way through.
The result?

A bold, fruit-forward coffee with notes of fresh strawberry, vanilla ice cream and buttery shortcrust pastry 🍓

Coffee tasting of our new blend☕
We had a great time sharing this one in store and getting some early feedback from customers and staff trying it for the first time.
Our new co-fermented blend is now pouring - built around a strawberry co-fermented Pink Bourbon from Colombia and balanced with an El Salvador component for everyday drinkability.
Expect notes of:
🍓 Fresh strawberry
🍦 Vanilla ice cream
🥐 Buttery shortcrust pastry

Home Barista Training ☕️

Learn how to make cafe quality coffee from your own kitchen, using the same techniques and standards used behind the bar.

This is hands-on training that takes you through everything from espresso extraction and grinder calibration, to milk texturing and how to pour silky milk for latte art.

You’ll learn how to understand your machine, dial in your coffee, improve consistency and troubleshoot when things don’t taste quite right.

All taught in a relaxed at-home session, so you can practice in your own space with your own setup, where it matters most.
