🍍 Jian’s Kitchen Signature Pineapple Chicken Curry with Hawaiian Fried Rice 🍗🥥
Here’s how I make my pineapple chicken curry—sweet, creamy, and full of fragrant flavor! 💛
Ingredients:
• About 3 lbs chicken legs and wings
• 2 cups fresh tomato purée
• 2 cups pineapple purée
• 1 cup creamy coconut milk
• 2 tablespoons gourmet curry powder
• 2 teaspoons freshly grated ginger
• 1 tablespoon chopped fresh garlic
• White onion, chopped
• Lemongrass stalks, cut in half and lightly bruised
• Tillamook butter for sautéing
• Salt and pepper to taste
How I make it:
1. Boil the chicken briefly to release some of the excess fat, then drain well and continue cooking immediately.
2. Heat Tillamook butter in a large pan over medium heat. Sauté the white onion, garlic, grated ginger, and lemongrass until fragrant and lightly golden.
3. Add the chicken and cook over medium heat for about 10 minutes, turning occasionally.
4. Add the fresh tomato purée and pineapple purée. Bring to a gentle boil, then reduce the heat and simmer for about 20 minutes, stirring occasionally.
5. Stir in the creamy coconut milk and gourmet curry powder. Add salt and pepper to taste. Simmer gently until the sauce comes together and the chicken is fully cooked, reaching 165°F in the thickest part, away from the bone.
6. Remove the lemongrass stalks before serving.
🍍 I pair mine with Hawaiian fried rice in a fresh pineapple boat, arranged on banana leaves with extra curry sauce on the side!
