Pyre Nashville Hot Chicken I learned to make Nashville Hot Chicken while living in Nashville. So I opened Pyre to serve up traditional Nashville Hot Chicken.

When I moved to Eugene I tried several local places selling "Nashville Hot" but none of it reminded me of Nashville.

Am I the crazy one for even suggesting that places that are looking for a food cart proactively offer a minimum? Do these folks know what it takes to transport 40lbs of cold fry oil, heat it up 350° and then have to wait for it to cool back down to safely transport or back….all for no minimum guarantee? Grey water, generator fuel, gas just to move the cart. You need to do better. We are not making money hand over fist so stop acting like you’re doing us a favor by up your lunch party. Rant over. My new mission in life of to push back against these places that are like, we just need a food cart.. If you’re serious. Pay us.

Did y'all know that there are more than red and green sauces when it comes to Mexican food. I feel like we're being ripped off with just the red and green sauces. There's chili con carne, chili Colorado, hatch green chili... there's a myriad of sauces that we're being deprived of.
