Since 1985, we’ve been doing one thing really well - serving specialty beer from around the world the way it’s meant to be enjoyed.

Long before “craft beer” was a buzzword, The Ginger Man was pouring proper pints, building a global beer list, and creating a place for people who actually care what’s in their glass.

Back in 1991, legendary beer writer Michael Jackson said it best:

“One of the best beer-bars in America."

We’ve grown, moved, and evolved over the years, but the mission hasn’t changed: Great beer, proper pours, and an atmosphere that feels like your favorite neighborhood pub no matter where you’re from.

From our roots in Houston to becoming a staple in Texas beer culture, we’re proud to still be here doing what we love 40+ years later.

We’re bringing a little Bavaria to the bar and pairing it with a bold American classic.

Weihenstephaner Hefe Weissbier + Redemption Rye Whiskey

Why it works:
The soft, pillowy wheat body and notes of banana and clove from the hefeweizen smooth out the spice-forward kick of the rye. The whiskey’s peppery backbone highlights the beer’s subtle citrus and yeast character, while the beer cools and refreshes your palate between sips. It’s bright, spicy, and incredibly balanced.

Fun Facts:
🍺 Weihenstephaner Hefe Weissbier comes from the Bavarian State Brewery Weihenstephan, founded in 1040 — widely considered the world’s oldest continuously operating brewery. Almost 1,000 years of brewing tradition in one glass.

As Trappist Takeover Week comes to a close, we just want to say thank you.

Thank you for slowing down with us.

For learning the stories behind the glass.
For appreciating some truly remarkable beers brewed with purpose and centuries of tradition.

A special thank you to Merchant du Vin for partnering with us and helping bring these authentic Trappist selections to our community. We’re grateful for their commitment to preserving and sharing some of the world’s most iconic breweries.

It was a joy to showcase everything from light and rare pours to rich, contemplative sippers... and to celebrate what makes Trappist beer so special.

Often ranked among the greatest beers in the world, Rochefort 10 is the strongest offering from the monks and a masterpiece of depth and complexity.

Flavor Profile:
🍫 Rich dark chocolate
🍷 Deep plum, raisin, and fig
🍬 Toffee and caramelized sugar
🌰 Subtle spice
🔥 Full-bodied, warming finish

ABV: 11.3% — powerful but impossibly smooth.

Fun Fact: Rochefort brews only a few times per year, and production is intentionally limited to maintain quality and support the monastery — not maximize output.

Today we feature the only English Trappist beer — Tynt Meadow from Mount St. Bernard Abbey.

Released in 2018, Tynt Meadow made history as the first English Trappist beer and one of the newest members of the Trappist family.

It’s brewed by monks in rural Leicestershire using English-grown ingredients — a beautiful fusion of Belgian tradition and British character.

Flavor Profile:
🍫 Dark chocolate
☕ Light roast & coffee notes
🍇 Dried fruit and fig
🌿 Subtle earthy hop balance
🔥 Warming, smooth finish

ABV: 7.4%

Fun Fact: The name “Tynt Meadow” comes from the land surrounding the abbey and references a medieval name for the area.
