We’re so excited to see PROOF featured in Eater’s story about the rise of tavern style pizza!

For us, this pizza has always been part of home. Growing up outside Chicago and living downtown for years, it was the pie on the table for Friday nights, family gatherings, and just about every occasion. We’re proud to bring that tradition, along with a little Midwest hospitality, to Portland.

Thank you to Bettina for telling the story so thoughtfully and for making room for PROOF in this bigger conversation about the tavern.

NO FILTER NEEDED.

This is how we bake our pizzas. The color, crisp edges, and char are intentional. To us, that’s part of what an authentic Chicago thin crust pizza looks and tastes like.

The past six months have been about getting better.

We’ve refined our menu, tightened our processes, and built the playbook that will allow PROOF to grow without compromising quality.

It starts with dough that ferments for 72 hours. Our sauce is made with San Marzano tomatoes and a kick of spice. We use our own blend of cheese and freshly sliced toppings, and we never skimp on any of it.

Every pizza is carefully made and baked until it’s crisp, golden, and exactly how we want it.

This is the pizza we grew up eating back in Chicago, made for everyone to share..

We didn’t set out to reinvent or follow pizza trends. We just missed the style of pizza we grew up eating. Thin, crisp, square cut and made to share around a table.

So we started making it ourselves!

Everything is made from scratch. Our cold 3 day fermentation dough, our sauce made with San Marzano tomatoes with a kick of spice, and our in-house blend of cheese. We load every pie with freshly prepped toppings, then cover the whole thing with cheese, just like the pies we grew up on. Every square topped with a bite of what you ordered.

What began as a way to bring a little piece of home to Portland became PROOF. After three years, a trailer, a tavern, a lot of dough and plenty of lessons, we’re still chasing that same feeling.

This is our version of home, and we’re so excited to share it with Portland.

Saturday we’re opening at 8:30 AM for the Ducks. Sunday we’re back at it at 9:30 AM for the Bears.

And since we’re making you get out of bed early, we’re finally rolling out our buttermilk biscuit sandwiches from open to noon.

We’ve been super busy over here at Morrison getting ready for Bears season and the return of NFL + college game days.

The menu is growing with more of the staples we love, including pizza puffs, Italian beefs, the Lower Wacker (“soggies” for my Midwest angels), chocolate chip cookies with rich vanilla ice cream and v5 of our dough for snappier and crispier pizzas (thanks to Ben for flying out and his week of dealing with my insane late nights and early mornings talking fermentation and how I can’t leave behind milk.. alas, it’s been overcome).

We’ll also have some special guest appearances from the buttermilk biscuit sandwiches that began, but quickly ended, due to size constraints at PROOF’s original Beaverton food trailer for those early game days.

Yep. They’re coming back! BISCUITS!! Limited runs and are solely for those mornings where the early birds bust out for door openings at 9 AM.

Add in the new cocktails, fun N/A drinks, new booth seating we’re installing next week, and Morrison is finally becoming the Chicago tavern we’ve been dreaming of ✌️

We’ve spent the last three months testing, tweaking and eating a whole lot of Italian beef here at the shop and back in Chicago. We finally feel like we’ve made one that tastes like what we grew up with back home.

Medium-rare round, thinly sliced and piled onto a 7” Turano roll, add melted mozzarella and our house giardiniera for full presentation. Served with a side of beef gravy carrying just a dash of salt, a pickle and your choice of Original or Jalapeño Tim’s Chips.

Get it dry, dipped or wet (baptized). And if you want even more house giardiniera, you can add a 4 oz side and pile it on yourself.

Come try one at the tavern. They’re available for dine-in, or yeah… we’ll let ya take one home if you order in person.
