Inspired by the perfumers of Paris and the fine chocolatiers of Provence, teamaker Steve Smith has once again picked up his tasting spoon — a big-bellied, sterling silver antique found in a stall in Tinsukia, India. Joined by trusted cohorts from his previous tea adventures, such as Tazo, he lovingly crafts each small batch of Smith in his Teaworks atelier.

Sake brewer Taisuke Sato of haccoba -Craft Sake Brewery- treats fermentation as an open landscape, where rice meets foraged plants, herbs, and spices in a revival of an ancient, free-spirited craft.

His latest brew draws on Tokyo Twilight, a tea we created in celebration of our Shibuya store, extracted slowly and cold so its umami and delicate herbal notes settle clearly into the glass.

The result is an abstract meeting of two crafts, and two makers.

We’re planning a tasting event in Portland, with the fine folks of Sunflower Sake Sunflower Sake , later this summer once the sake lands here, so stay tuned.

When the heat sets in, this is where the afternoon slows down.

Hibiscus Mango brewed bright and bold, frozen into a granita that catches the light, then finished with a soft cloud of vanilla creme fraiche whipped cream. Cool, fragrant, and just sweet enough.
