Ooink Pack the unique flavor and ship to you, so you can have it anywhere and anytime. The Ooink Story

This bowl of soup took years to make. Ooink is a team.
(315)

Well no, not literally… but the dream & concept of Ooink have been the product of years of hard work, experience, & a quest for perfection. The Ooink team grew up eating noodles & soup… every bowl bringing comfort, memories, & nourishment. We want to share those same feelings with the Capitol Hill community, & become a part of this wonderful neighborhood. Our bowls of ramen not only go hand & hand with the weather of the city, but hopefully can be a piece of home for the vast cultures & tastes that make up Seattle’s citizens. Ooink’s preparation is simple & traditional, with the number one focus always being, “respect the ingredients.”

The pig is often the star of the show, but every ingredient that enters the Ooink kitchen is given the chef’s full attention, leaving nothing to waste & no detail overlooked. The preparation is classic in style & one that has been tested & tried over & over; always striving to achieve perfection, a labor of love you can taste in every slurp. A crew of friends & strangers, who have helped build the craft of our restaurant, & always been together focused on the same dream, which would be impossible without everyone's hard work. So please, sit back… enjoy a drink, let the broth warm you, the flavors comfort you, & please slurp, no other sound could be a better compliment to the Chef & Ooink team.

A story that's very close to our hearts and we are grateful that we were able to visit this place and learn about all the hard work and effort that goes into a bottle of Soy Sauce! Here's a full vlog of our trip to Jiulongkou Sauce Garden in Jinhu, China

We’re not experts at making videos or writing catchy headlines, but we think this story deserves to reach more people.

This summer, we visited our soy sauce supplier for the fist time in Jinhu, a small town in Jiangsu, China. It’s a place known for its rice, wheat, and fish—a “鱼米之乡,” a land of fish and rice. The land is generous, with multiple harvests throughout the year, and people have long turned what grows locally into something special: wheat into soy sauce, rice into vinegar.

That’s where we met Mr. Ye.

He used to sell wheat to the soy sauce brewery. When the old master who ran it was ready to retire, Mr. Ye couldn’t bear to see the traditional craft disappear with him. So he became his student, spending years learning how to brew soy sauce and vinegar. Today, he carries on that work himself.

In the brewery’s courtyard, around a thousand jars sit under the sun. The soy sauce ferments naturally for over a year, passing through all four seasons and slowly developing its layers of flavor. It takes patience, experience, and care.

We’ve used this soy sauce at Ooink for years. If you’ve visited our Capitol Hill shop, you may have noticed the bottles filling our shelves. We add our own Ooink ingredients to make our tare—the seasoning at the heart of every bowl of ramen. This soy sauce is also the star ingredient in our Ooink Seasoning Soy Sauce, available at shopooink.com. We build on the flavor he has patiently developed, adding our own ingredients to create something you can enjoy in your kitchen.

Visiting the brewery gave us a chance to see the work behind an ingredient we use every day, and to meet the person keeping that tradition alive.

Please take a few minutes to watch the video. If the story means something to you, share it. We’d love for more people to know Mr. Ye and the craft he chose to carry forward.

Last month, our trip to China took us somewhere we’d wanted to visit for a long time, the 150-year-old soy sauce farm where we source our soy sauce for Ooink. 😍 https://youtu.be/oP4rn64JfSM

Getting to meet the people behind it, learn from them, and see the care that goes into every batch made this visit incredibly special. We’re grateful to Mr. Jing and the whole team for welcoming us and sharing their craft so generously.

We love showing you what goes into your ramen bowl, and the people and places behind those ingredients.

Whenever we can, we choose ingredients made through traditional, natural processes over industrial alternatives. This visit was a beautiful reminder of why those choices mean so much to us.
