Salva Cremasco…a crumbly, velvety but dense cows milk cheese from Ciresa Formaggi out of Italy. On our cheese boards for the next week or so. Stop by for a nibble!

“Salva” means saved, as this creamy and crumbly selection was originally made to save excess milk from spoiling. The square of velvety white paste has an earthy, stone-like rind that infuses the milky cheese with an earthy, herbaceous, and slightly mineral-like essence.
