Sebastián and his team handpick only the ripest cherries, which are meticulously hand-sorted before being transported to La Pradera processing center. There, the cherries undergo a 45-hour aerobic fermentation, followed by 8-12 days of raised-bed drying in a temperature-controlled greenhouse, carefully turned throughout to ensure even drying. The result is a fruity, sweet, and full-bodied cup, produced through a fully sustainable process that recycles and naturally filters all water back into the land.

Maru’s Kemi espresso blend is comprised of sixty percent Colombia and forty percent Ethiopia. It was created to perfectly balance between a light and dark espresso, for those that like a reliable medium-bodied espresso. It boasts deep caramel-like sweetness with mild bright fruitiness for a well-rounded cup. We find this blend tastes great as is for espresso, as well as in small milk drinks like macchiatos, cortados and cappuccinos.
