A meeting of the minds, so to speak😊. A prep list, a knife roll and Larousse Gastronomique. These three bedfellows have played a part in my daily life, and the daily life of so many cooks and chefs around the world for so many years. The Gastronomique is often referred to as The Food Encyclopedia, and for good reason. It was the first and still the most comprehensive guide to classic French cuisine. Pretty sweet. Anyone remember this one?? It’s been a minute! It starts with a fresh avocado 🥑 — and Jack only makes it better from there. He quickly sauté’s shrimp and artichoke hearts with grape tomatoes then nestles it inside the avocado and over a roasted red pepper coulis. 🦐 🍋‍🟩 Lime aioli on top. Grilled herb-rubbed bread on the side. Bang: Shrimp Stuffed Avocado deliciousness.

Cod can get a bad rap. Not here😊

🐟🥔We crust it in potato, pan-sear it until that crust locks in, then set it over jasmine rice in a caramelized onion lemon cream with grilled Andouille and fresh pea shoots. 🫛

This one’s not on the menu right now — but it has its fans. If you’re a Potato Cod fanatic and want us to drop you a message when it comes back, say so in the comments. We’ll remember you.

Emma, our extraordinary Garde Manger (person in charge of cold foods), built this indulgent masterpiece:

Snickers Cheesecake- Vanilla bean cheesecake in a graham cracker crust drenched in house made creamy caramel, chocolate ganache, Snickers pieces and whipped cream! Garnished with a chocolate tiara and candied orange zest. 🍊🍫🧀🍰

Hearts and Sole- Tender filets of sole roasted with lemon butter over pesto tossed and roasted artichoke hearts, asparagus and heirloom cherry tomatoes. Served over jasmine rice.
